I was browsing an old book of Amish quilting patterns and stumbled over a recipe for peanut butter pie tucked into the corner of a page. I hadn't seen this recipe for ages...but remembered it was a winner! I lost no time whipping up another and friends who joined us for dinner proclaimed it a success! So, other than a few more klosjes, I only have this pie recipe to add to my blog! Hope you enjoy it too!
AMISH PEANUT BUTTER PIE
Have 2 pre-baked pie shells handy (see note at bottom of recipe)
Take 2/3 cup peanut butter, 1 1/2 cup sifted powdered sugar and blend together until mealy. Sprinkle 2/3 of the peanut butter mixture evenly in the pie shells, saving the remaining third for topping.
Scald 4 cups milk in a thick sauce pan (or double boiler). Combine in a bowl 1 cup sugar, 2/3 cup flour, 1/4 teaspoon salt and the yolks of 6 eggs. Stir into the scaled milk, stirring contantly over low heat. As soon as the mixture is bubbling, take off the heat and blend in 1/4 cup softened butter and 1 teaspoon vanilla. Pour into pie shells.
Beat the 6 egg whites until stiff--adding 1/2 teaspoon cream of tartar, then gradually 1 cup of sugar mixed with 2 teaspoons corn starch. Beat meringue until stiff and shiny. Swirl the meringue on top of the hot filling in the pie shells. Sprinkle the pies with the remaining third of the peanut buter/powdered sugar mixture. Brown meringue at 350' for 10-15 minutes.
(Note: I tweeked recipe by throwing a handful of semi-sweet chocolate chips into the hot pie shell when it came out of oven. When they melted, I took a knife and spread evenly over pie shell. The raves seem to feel that a bit of chocolate is a GOOD thing...so you might want to try it too.)

Oh goody! Thank you for sharing this recipe! As mentioned before, I'll want to tweak it to either greatly diminish the amount of sugar, or substitue honey in a moderate amount. I've done this so many times with other recipes, so I'll let you know how it works out. Busy weeks ahead, so no guarantees as to how quickly I'll get to it. : D Thanks again!!!!!
ReplyDeleteThat sounds so yummy! I don't bake many pies anymore, but if I did I would surely give thaat one a try. Putting the chocolate bits in the bottom of the pie shell is a great idea! Carol
